Crumb Topping

Student: Sir, you know what I’ve realized after taking this course?
Me: What’s that?
Student: I love sugar.
Me: *realizing I need to work on pushing some healthier recipes with the kids…*
Also me: Crumb Topping? I put that stuff on everything!

Admittedly, I have a big sweet tooth. But, is it just me or does putting a crumb topping on muffins and coffee cakes make them taste so much better? Crumb topping is a great (read: easy, fast) way to enhance baked goods. Simply prepare as directed below, then add to your favourite muffin or coffee cake recipe before baking.

Ingredients
113g butter, cold and cut into 1/2 inch chunks (1/2 cup)
120g light brown sugar (1/2 cup)
1.5g ground cinnamon (3/4 tsp)
0.6g salt (1/8 tsp)
0.6g baking powder (1/8 tsp)
120g bread flour (1 1/3 cup)

Instructions
1. Sift cinnamon, salt, baking powder and bread flour into a stainless steel bowl.
2. Whisk in brown sugar.
3. Rub butter into flour until the mixture becomes sandy.
4. Use immediately or freeze until ready to use.
